Latest Recipe in Le Meridien, Saigon invites diners to an international culinary experience set against inspiring views of the Saigon River. The restaurant is at the Mezzanine floor of the Le Méridien hotel. It has a casual dining setup and contemporary look, luxurious and the lighting is great. A perfect place for a special occasion or gathering for any kind of celebration. If you need some private space, there are tables for a more exclusive dining experience at the left side corner of the dining area.
The buffet has wide selection of western, asian cuisine and fresh seafoods that can be poached, boiled or grilled depending on your liking. They have fresh oysters too! It’s not too extensive but as the saying goes, quality over quantity. The western section have comfort foods like pasta and pizza. There’s also a japanese section for sushi, sashimi and a local section with variety of meats for barbecue.
I went straight for the mains and decided to have a half of a lobster and two king prawns. I selected two sauces with it, a delicious tartar sauce which I think goes well with the prawns and ginger fish sauce which has a more distinct vietnamese flavor. It was grilled and sent straight to my table. The staff quickly but gently poured a glass of Sauvignon Blanc in my glass, a perfect pairing for my meal. I myself cooks a lot at home and I know how quickly seafood can get overcooked, just from how it looks Seafood is cooked perfectly hence the taste, the chef did a great job on the grills. I love the ginger fish sauce, it’s a symphony in my mouth with the perfectly cooked lobster and prawns.
I slowly tasted most of the dishes after my heavy mains, starting from the western section where I had slice of roasted beef. It’s juicy and melts in your mouth! The Singapore corner has some of my favorite dishes such as the Black Pepper Crab and Mee Goreng. It all tasted very close to what I get from Singapore, delicious. Chef Ethan of St. Regis Singapore did great, even he can only used flat rice noodles on his Mee Goreng, it was like a vietnamese version of the dish. Indeed, being a great cook, you must able to deliver a good dish out of the ingredients available and Chef Ethan didn’t disappoint us.
There’s an inviting ice kachang at the dessert section. It’s a popular cold dessert in Singapore which literally means ‘ice beans’ but I went for more appealing sweets (creme brulee, dark chocolate truffles and french macarons). One round of sweets is not enough so I went back to the dessert section and grabbed some fruits and dipped it in the chocolate fondue.
It’s unusual but I like finishing my meal with a hot soup. So I did not let the delicious lobster bisque pass my palate.

The Service and Staff
Staff are polite and smiles all the time. Service is very professional and quick. The servers took care of our finished plates and empty wine glasses in an instant, they are very attentive to customer’s needs and made sure everyone is enjoying their dinner. The assistant manager himself checked on us twice if we are having a great time.
It was a privilege meeting Chef Ethan Tang of St. Regis, Singapore. Chef Ethan brought his masterpiece of local Singapore dishes in Saigon, it’s a great treat to taste my favorite local dishes overseas.
Saigon is a foodie’s paradise. In every corner of the city there’s a good place for either street food, local vietnamese favorites such as Pho, Bánh mì or just a local coffee. A dining experience in Latest Recipe validates that the city of Saigon is indeed a heaven for good food not just for local but international cuisine as well. Give them a visit when you are in Saigon.
